Sweet and Spicy Cucumbers

4 cups thinly sliced cucumber
3 Tbsp red wine vinegar
3/4 tsp sugar
1/4 tsp salt
1/4 tsp crushed red pepper

Combine all ingredients in a bowl and toss gently to coat. It is best to prepare this dish first and then allow it to sit while you cook the main dish to allow the cucumbers to absorb more flavor
